Roasted Chicken Breast with Sweet Potato Fries & Steamed Spinach

Ingredients
- 4oz skinless chicken breast
- 1/2 cup balsamic vinega
- 1/2 cup lemon juice
- no-salt seasoning to taste (Kirkland Organic is my fave!  But Mrs Dash is good too!)
- whole sweet potato
- 1 tsp olive oil
- 2-3 cups of spinach

Instructions
1. 
Marinate chicken breast in the balsamic vinegar, lemon juice and no salt seasoning mix for at least 2 hours or overnight.
2. Pre-heat oven to 400 degrees
3. Place the chicken on a rack or cookie sheet in the oven and cook for 30 minutes or until thoroughly cooked to your liking.
4. Wash sweet potato well and cut into strips. 
5. Toss them with the olive oil and no salt seasoning. 
6. Place them on a baking sheet coated with cooking spray and cook at 400 degrees for 20-30 minutes, flipping once halfway through.
7. When the chicken and sweet potato are almost done cooking, cook your spinach in a pan with a small amount of water, covered, until just wilted.
8.  Enjoy!

Ingredients
  • 2 medium sweet potatoes, chopped
  • 4 tsp. olive oil, divided use
  • ½ medium ripe avocado, cut into chunks
  • 2 cloves garlic, coarsely chopped
  • Water, divided use
  • 3 medium zucchini
  • 1 tsp. fresh lemon juice
  • 2 large eggs
  • Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
  • 2 medium green onions, finely chopped
Instructions
  1. Preheat oven to 375ยบ F.
  2. Place sweet potatoes on a baking sheet. Drizzle with ½ tsp. oil; mix well. Bake for 20 to 30 minutes, or until tender-crisp. Set aside.
  3. While sweet potatoes are baking, place avocado, garlic, 2 Tbsp. water, and remaining 3½ tsp. oil in a food processor (or blender). Pulse until well blended. Set aside.
  4. Using a vegetable peeler, cut each zucchini into lengthwise strips about ⅛ inch thick. Turn each zucchini slightly after cutting each strip to work evenly around the outside, stopping when you hit the seeds at the core. Discard cores. Cut slices lengthwise into ½- inch ribbons. Set aside.
  5. Place water in medium saucepan and bring to a boil over medium-high heat. Add lemon juice; reduce heat to maintain a gentle boil.
  6. Break eggs into a small bowl. Hold bowl close to the water’s surface and slip the eggs, one by one, into the water. Cook until whites are completely set and yolks begin to thicken, about 5 minutes. Gently lift eggs out of water; keep warm.
  7. Boil water in steamer or large saucepan over high heat. Reduce heat to medium-high. Place zucchini in steamer basket; cook for 2 to 3 minutes, or until tender. Remove from heat.
  8. Place zucchini in a medium serving bowl. Season with salt and pepper if desired. Add avocado mixture; toss gently to blend.
  9. Divide zucchini between two bowls; top evenly with sweet potatoes, green onions, and an egg. Serve immediately.
Tips:
  1. Zucchini can also be sliced on a mandolin; adjust to a very thin slice.
  2. This recipes would be a great way to use leftover (cooked) sweet potatoes, and it would reduce the time to make the recipe.

Sweet Potato Salad Recipe

Sweet Potato Salad


Sweet Potato Salad

Yield: 2 servings
Ingredients:
1 Tbsp. extra-virgin olive oil
1½ tsp. red wine vinegar
1 tsp. fresh lemon juice
½ tsp. raw honey (or pure maple syrup)
1 dash Himalayan salt (or sea salt)
1 tsp. chopped fresh herbs (like basil, oregano or parsley) (to taste; optional)
1 medium baked sweet potato, peeled and cut into ½-inch cubes
1 medium green apple, diced
½ medium red bell pepper, diced
1 stalk green onion, finely sliced
2 Tbsp. finely chopped fresh cilantro
4 cups fresh arugula
2 Tbsp. pumpkin seed kernels, toasted (or chopped raw walnuts)
Preparation:
1. Combine oil, vinegar, lemon juice, honey, salt, and herbs (if desired) in a medium bowl; whisk to blend. 
Set aside.
2. Combine sweet potato, apple, bell pepper, onion, and cilantro in a large bowl; mix well.
3. Drizzle dressing over sweet potato mixture; toss gently to blend.
4. Place even amounts of arugula on two serving plates; top each with sweet potato mixture and sprinkle with pumpkin seeds.

Tip: Bake fork-pierced sweet potato at 450° F for 30 to 40 minutes or until just tender. Do not over bake; cool.
